Nem Ninh Hoa
Nem Ninh Hoa includes fermented pork roll and baked pork roll. To make fermented pork roll, we use lean pork from pig’s thights. People put hot lean meat in grinder and grind them by hands. This is an important step, can’t be replaced by any machine. Grinding meat is art. We have to grind steadily to make meat well kneaded, put enough sugar, salt into. We not only need fresh lean meat, but also boiled pork skin cut into thin threads. After finishing grinding meat, we mix meat and boiled pork skin together and pack them with Chùm Ruột or Vông leaves. Continue to pack them with banana leaves and tight them with bamboo strings. After 3 days, we open them and we can see the pink of pork rolls, which make people curious.
Different from fermented pork roll, baked pork roll is served hot and immediately. Baked pork roll is also make from well knead lean meat with a little fat meat, pepper, garlic, sugar and salt into. We can bake them on coal fire.
